4. Doors not sealing properly. Gaskets full of holes or cracks allow warm air to enter. Or gaskets that are not clean may not seal properly. Clean surfaces with light detergent and warm water.

Eastern grub that lives up to its promise spiced up by a fight over the bill

YOU will recall last Wednesday, a lovely late summer day. Thoughts turned at once to Christmas; it may only be a matter of days before the Eastern Bamboo’s card arrives.

It’s almost always the first, always the same – an oriental red and gold design with not a sprig of holly or white-bearded wonder to be seen.

Raymond Ma must have bought about three million when 35 years ago he came to Darlington; still he works merrily through them.

Thirty-five years. Half a lifetime.

That’s how long they’ve been in Northgate, couple of doors down from the Odeon, and Raymond’s father a few years before that. To have survived – and thrived – that long rather tells its own story.

Nor has he thoughts of retirement.

Can’t afford to; two sons at university. We said we knew all about it.

If Raymond still copes masterfully in the kitchen, however – and shuts the place when he takes a holiday – then his wife manages no less adroitly, or engagingly, up front.

We’d last been there 11 years ago, June 1999, but were recognised at once. “You sat in that corner, had the hors d’oeuvres, ” she said and the archives say she was spot on.

Did she also remember the two well-known Darlington gentlemen hugger-mugger in another corner with, shall we say, some very dubious company? It seemed better not to ask.

This time, a couple of Chinese occupied the corner, counting their money between courses. It’s no doubt a native custom.

Mymemory being altogethermore fallible than Mrs Ma’s, it was impossible to recall how little – or how greatly – it had changed, but possible to suppose that the answer was not very much at all.

Nor, very likely, has the menu much altered, either, though the fresh fish board included whole sea bass. The wording’s bland, prosaic, a plain wrapping concealing real delights within.

It was 7.45, pretty full, wholly convivial. Chopsticks provided; forks for the feckless. There was nomusic, not even Jingle Bells. How much is lost by that? Not a jot. Howmuch gained?

Raymond’s a dab hand – for Eastern Bamboo read cane and able – right down to the trademark roses that he carves out of turnips out the back and which accompany many dishes.

A rose by any other name may not smell just as sweet, of course – not if it’s a snagger – but the Boss was particularly impressed. She remembered trying to carve turnip lanterns for Hallowe’en, and they really did frighten the neighbours.

Goodness knows if it’s authentic – when the bairn was in China he existed on Big Macs – but it’s wholly different, and many a mile further up the Great Wall from the average Chinese restaurant.

The set meal is [pounds]16, lots of choice.

The vegetarian hot and sour soup was deep, enticing, aromatic and thoroughly good. The Shanghai chicken – a high-class bird poached with ginger and spring onion and said to be served at room temperature – came with a little pot of the sauce. You could have eaten it all night.

It was accompanied by a couple of bottles of Tsingtao lager, said to be brewed in China but to the untutored palate indistinguishable from that brewed in Thailand, Bombay or, quite possibly, British West Hartlepool.

The lady dined from the carte, started – after the prawn crackers – with succulent jumbo prawns with garlic and tomatomoved on to a bowl of monk fish with more ginger and spring onion and goodness knows what else. Delicious.

The smiley, all-female staff were unobtrusively excellent; the atmosphere civilised.

Meals are always followed by a plate of fresh fruit – melon, plums, orange and mango fruit – and by good coffee and China tea. The chocolates are Rington’s; very ethnic.

More folk had arrived. Raymond still busied himself in the kitchen but sent word that the meal was to be on the house. We protested: It’s not the way the column does things;

never has been. Mrs Ma, all five foot nowt of her, stood firm.

Finally we gave in, save for a rather larger than usual tip. For us, and for the accounts department, all the Christmas cards had come at once.
